Recipe: best carrot cake ever
Best Carrot Cake recipe ever
This is my favourite carrot cake. Icing was put on too soon in this version that got photographed while the cake was still hot. Usually it will hold up and look less drippy than this.
Ingredients
1 cup sugar
2 cups flour
1 tsp salt
1 tsp cinnamon
1 cup brown sugar, packed well
1 tsp baking powder
1 tsp baking soda
3 cups finely shredded carrot (organic have the most flavour)
1 1/2 cups vegetable oil
2 tsp vanilla 4 large eggs
1/2 cup chopped nuts (we like walnuts)
1/2 cup raisins
1. grease and flour 2 round cake pans
2. stir together dry ingredients
3 add carrots, eggs, oil and vanilla to the dry ingredients
4. beat about 2 to 3 mintues until well mixed
5. stir in raisins and nuts
6. Divide batter in two between the two pans
7. bake at 325 for 25 to 35 minutes.
8. check centre of cake to see if it is done
9. cool on wire rack
10. assemble the two cakes together, putting a layer of frosting between them and then frost the top and sides
cream cheese icing
1 3 oz package of cream cheese, dairy free or regular
1/2 cup of margarine or butter
1 tsp vanilla
1 1/2 cup powdered sugar
with cream cheese at room temperature mix all ingredients together. Frost the cooled cake and enjoy!
