My Dutch Appeltaart
I made my first Dutch Appeltaart (deep dish apple cake) recently and it was really good but the recipe was too big for my spring form pan. So I adapted it and researched some other recipes and came up with this one.
7 - 8 Golden Delicious apples, peeled, cubed and soaked for 10 minutes in boiling water (Foodlab tip to keep their shape after baking).
For the dough:
320 g all purpose flour
130 g vegan margarine (because me)
160 g sugar, brown and white mixed
1 tablespoon baking powder
1 egg
To mix with the apples
1 tablespoon Speculaas spice
(mix ground cinnamon, cardamom, cloves, white pepper, ginger, coriander, nutmeg)
zest and juice of one lemon or orange
some sugar
some flour
some cornstarch (you know, just coat the apples a bit)
Preheat the oven to 375 degrees. Line the bottom of a spring form pan with parchment paper and grease the sides.
Mix the dough and let it rest.
Peel, chop and soak the apples.
Mix up the Speculaas spice.
Drain and dry the apples.
Line the spring form with 2/3 of the dough, sides and bottom.
Toss the apples with the lemon juice, lemon zest, spices, some brown sugar, some flour and cornstarch, just a light coating and then put it all in the dough. Top the apples with crumbles of the remaining third of the dough. Coat the top layer with some brown sugar.
Bake about 1 hour and 15 minutes. Let it cool and serve. I could also top it with apricot jam.
