My spicy lamb burgers
My lamb burger recipe is a mish mash of ideas from a group of recipes online for Xi'an smushed lamb burgers so here is my much simplified version.
Spices for the seasoning of the meat:
Finely ground Szechuan peppercorn
ground coriander
ground cumin
ground cinnamon
some garam masala or couscous spices
finely chopped ginger and garlic
finely chopped half onion
a handful of corn meal
1 egg
some soy sauce
dijon mustard
brown sugar
mirin or Chinese cooking wine
Use about 1/2 tsp. of each of the dried spices, 1 tablespoon of the liquid ones and the chopped spices. Stir and then form meat patties. Fry these in a cast iron skillet.
For the topping:
coleslaw from:
thinnly sliced cabbage
a bit of salt and a pinch of sugar
a splash of vinegar
1 tablespoon of tahini sauce
A thin slice of tomato is also nice on the bun as well as a bit of Japanese mayonnaise and some yellow mustard. Top ti all with some kim chi.
